C is for Cookies

One of my favorite things to do is to create deliciousness in my tiny kitchen 🙂  There is just something about making a home cooked meal…or dessert that makes me happy! Recently I’ve been on a big brownie and freezer meal kick.  Yesterday I make a batch of Lactation Cookies!  These are scrumptious and key in boosting my supply so I can build up my freezer stash.  I exclusively breastfeed, we are together pretty much all the time since I work from home.  In order for me to have enough of a supply to add in a pump session I rely on these Oatmeal Chocolate Chip Cookies!  A friend of mine made them for me shortly after Princess was born and I immediately fell in LOVE with them.

Ingredients:

  • 1 c Butter
  • 1 c Sugar
  • 1 c Brown Sugarimage8
  • 4 TBS Water
  • 2 TBS Flaxseed Meal (I ordered mine off Amazon)
  • 2 Large Eggs
  • 1 TSP Vanilla
  • 2 C Flour
  • 1 TSP Baking Soda
  • 1 TSP Salt
  • 2 TBS Brewers Yeast (Also bought off Amazon)
  • 3 Cups of Old Fashion Oats
  • 1 Bag of Chocolate Chips

Steps:

  1. Mix Flaxseed Meal with Water, Set aside for 3-5 minutes
  2. Cream Butter and Sugar
  3. Add Eggs
  4. Add Flaxseed Meal Mixture and Vanilla
  5. Sift in Flour, Baking Soda, Brewers Yeast, and Salt
  6. Mix in Oats 1 cup at a time
  7. Add in Chocolate Chips
  8. Bake at 350 for 8-12 minutes depending on pan and your oven

This recipe makes about 5 dozen cookies.  Once baked let them cool and store.  I put them in a Ziploc bag and put them in the freezer if you’d like.  I do this for a couple reasons…So I don’t eat them all right away and to help them last longer!  I just pop them out of the freezer when I need them!  Make sure to label them for your hubby/children/friends whomever might raid your freezer.  Told you that was an easy recipe!  I hope these cookies help you out as much as they have helped me and my friend.
