C is for Cookies
One of my favorite things to do is to create deliciousness in my tiny kitchen 🙂 There is just something about making a home cooked meal…or dessert that makes me happy! Recently I’ve been on a big brownie and freezer meal kick. Yesterday I make a batch of Lactation Cookies! These are scrumptious and key in boosting my supply so I can build up my freezer stash. I exclusively breastfeed, we are together pretty much all the time since I work from home. In order for me to have enough of a supply to add in a pump session I rely on these Oatmeal Chocolate Chip Cookies! A friend of mine made them for me shortly after Princess was born and I immediately fell in LOVE with them.
Ingredients:
- 1 c Butter
- 1 c Sugar
- 1 c Brown Sugar
- 4 TBS Water
- 2 TBS Flaxseed Meal (I ordered mine off Amazon)
- 2 Large Eggs
- 1 TSP Vanilla
- 2 C Flour
- 1 TSP Baking Soda
- 1 TSP Salt
- 2 TBS Brewers Yeast (Also bought off Amazon)
- 3 Cups of Old Fashion Oats
- 1 Bag of Chocolate Chips
Steps:
- Mix Flaxseed Meal with Water, Set aside for 3-5 minutes
- Cream Butter and Sugar
- Add Eggs
- Add Flaxseed Meal Mixture and Vanilla
- Sift in Flour, Baking Soda, Brewers Yeast, and Salt
- Mix in Oats 1 cup at a time
- Add in Chocolate Chips
- Bake at 350 for 8-12 minutes depending on pan and your oven
This recipe makes about 5 dozen cookies. Once baked let them cool and store. I put them in a Ziploc bag and put them in the freezer if you’d like. I do this for a couple reasons…So I don’t eat them all right away and to help them last longer! I just pop them out of the freezer when I need them! Make sure to label them for your hubby/children/friends whomever might raid your freezer. Told you that was an easy recipe!
